A few weeks ago I hosted a little baby shower for my sister-in-law Erin. Her super creative sister-in-law Stephanie helped me out too (she made the cute diaper cake below)! I am so excited to have a new baby in our family, this will be Erin’s third boy and my third nephew. It has been a while since I have hosted something at my house and I really wanted to try out some new things I have seen on some of the blogs I follow. The weather was perfect and everyone was so happy for Erin.
My inspiration for the ceiling decorations and letter decorations came from one of my new favorite blogs A Beautiful Mess.
The ceiling decorations were a flash back to my Girl Scout days, they were so easy to make. Basically you just need some tissue paper, string, push pins and some scissors.
I used old paper bags for the letters and found the white stickers at Hobby Lobby (inspired by this post).
No brunch can be complete without some mimosas and mommy-mosas to start us off.
Then I made gluten-free mini quiches (with kale, onion, tomato) inspired from another blog I follow The Healthy Tipping Point, gluten-free blueberry muffins and gluten-free/dairy free fruit, yogurt and granola parfaits. The mini quiches were super easy, I made them in muffin pans. Looking back I would suggest using some type of muffin cup (the pans are still dirty-haha).
For the blueberry muffins I used Sugar Free Namaste brand muffin mix. I added vanilla, agave nectar and blueberries to the mix but they may have still needed more sugar. They tasted a little earthy, but I loved them!
The parfait was yummy. I used So Delicious Vanilla and Plain coconut yogurt and mixed it 50/50 so it wouldn’t be too sweet. I cut up strawberries, blueberries and blackberries and topped it off with gluten-free granola I found at Whole Foods.
We had a wonderful time, and I am super excited for Bret’s arrival. Kudos to my brother and sister-in-law for the courage to raise 3 wild boys! They really are great parents and I just love being an Aunt!
